It works for me every time I want to reset them At the bottom of the screen it has a Triangle option and you can choose Controller-simplified or Controller-simulation from the next screen (after selecting Air) by pressing Right on the pad.

Again the controls war thunder has put out there for the Xbox controller is the standard for flight Sims on Xbox in regards to throttle, pitch, roll, and yaw My apologies, I did not make it clear
ESC > CONTROLS > CONTROL SET UP WIZARD> AIR CONTROLS > FIND MOUSE AND KEYBOARD SIMPLE (OR ONE YOU WANT) AND SELECT> BASIC CONTROLS FOR TANK AND AIR HAVE BEEN SELECTED.
